But I've been studying.  I know all the mistakes I've made.  This time I avoid even a speck of yoke, it's all eggwhite.  And I beat it on high until peaks appear, and then I slowly add sugar, continuing to beat.  After about 5 minutes I've got an impressive half bowl of stiff meringue and I shut the mixer off.

Tilting the blade up, I admire the superglob of meringue on it, all ready to put on the lemon pie inches away.  It's time to remove the blade.

So I reach for the release button only instead I turn the mixer on full blast.

Meringue all over my shirt, pants, cupboard doors (an impressive ricochet), floor, and counter.

I go to bed shaking, in a cold sweat, as my meringue gently weeps.

Lemon merengue is my fav. Haven’t had it since going pre-diabetic. I miss it. 

My mom made the best lemon merengue pie but she hasn’t made one in well over a decade. Too much work.

Yeah, a whole lot of work.  Only makes sense if you mass produce three or four and freeze them.  But that doesn't seem possible.

As things stand, after this ordeal, I can't see doing it again.

But dang, lemon meringue pie is delicious!

P.S. DM, is your diet strict, or could you indulge a slice?

Won't clutter up your job hunt thread, DM, so here it be:

LCF and I remember you buying the Indonesian puppets, and likely the Lord Guan statue (Was that where the heavy Guandao was a tourist attraction?).  But oddly, we're not remembering the genesis of the jian with stealth dao in scabbard gift.  Should we be embarrassed?  Even a seppuku offense?

Maybe it was more Carol, Martha & Chet. It was acquired at the Hongqiao antiques market. We were all fascinated by it (remember Chet bought a lot of pieces) and then some one collected to covertly purchase it for me. It was presented to me at the Beijing hard rock and I was a bit embarrassed because even though i wasn’t getting paid for my work, I did get a free trip.

Yeah.  That's coming back to me some.  Not certain who guided that whole operation.  But it was definitely a group sentiment.
